Optional toppings: Flaky sea salt and sprinkles for extra flair.

Instructions

Line a large baking sheet with parchment paper or wax paper.

Arrange Ritz crackers in a single layer on the prepared baking sheet, half facing up and half facing down.

Spread about ½ tablespoon of peanut butter onto the center of each cracker.

Gently press another cracker onto the peanut butter layer to create a sandwich cookie.

Avoid squeezing too hard to prevent peanut butter from oozing out.

In a microwave-safe bowl, melt the chocolate chips (and coconut oil if using) in 30-second bursts, stirring between each burst.

Alternatively, use a double boiler.

Dip each cracker sandwich into the melted chocolate, coating it completely.
